I'm a real oatmeal cookie monster... I only counted, and as of January 2018, I've shared 47 oatmeal cookie recipes with you. Eep! Have you ever tried any of these yet? (? You can locate all of my oatmeal cookie recipes directly there!) They're a few of the most well-known recipes on my site because they taste really sweet and comfy, just like conventional"indulgent" oatmeal cookie recipes, but they contain no refined sugar or bread!
That means you'll begin with whole wheat flour (or fermented, if you like ) and instant oats (such as those... or these for a gluten free edition!) . Instant oats are smaller and thinner than conventional rolled oats, also you are able to find them in canisters right alongside those old-fashioned oats at the grocery shop.
I probably sound like a broken record by now... But cause I ? you and want your cookies to flip out perfectly soft and chewy, I am reminding you ... Quantify your flour and oats properly, using this technique or even a kitchen scale! (? That's the one I own and enjoy. It only cost $20!) A lot of either ingredient is likely to make your biscuits taste cakey or dry, as opposed to chewy. This is particularly true of the oats--they act like little sponges and consume lots of moisture from your cookie dough!
Ripe bananas- ideal for baking! Really like all @amybakeshealthy's yummy & wholesome banana recipes!
Watch these bananas? And all those brown spots? If it comes to baking with bananas, brown = beautiful! I ? extra speckly bananas because they have a lot glowing, bold taste --and extra sweetness! That is the minimum amount of brown that I recommend. More is even better!
The remainder of the cookie dough's sweetness comes in another natural ingredient... Pure maple syrup (such as this!) . You desire the kind that comes straight from pine trees, which is usually sold in thin glass bottles or squat, round plastic jugs. Forget the pancake syrup and sugar-free syrup!

The pancakes include even more natural sweetness! The freshly bought, extra plump, perfectly delicate ones are perfect... But for those who have old, somewhat dried out raisins (hmm... it seems silly to describe dried fruit as dried out! ) , that is fine!
Only add them to some microwave-safe bowland pour water on top until they're totally coated. Seal plastic wrap across the top, and then microwave the bowl on high for 1 second. If you let the peppers sit mixing together the cookie dough, then this small hint hydrates them they're incredibly succulent --and that makes a significant difference in these cookies once they're baked!

Healthy Banana Oatmeal Raisin Cookies
Yields: 15 cookies
These oatmeal cookies are soft, chewy, and full of banana flavor! The recognizable cozy spices and plump raisins make these even more irresistible. They'll keep for at least one week if kept in an airtight container in the refrigerator--should they last that long!
1 cup (100g) instant oats (gluten-free if necessary and quantified like this)
3/4 cup (90g) whole wheat or gluten-free* flour (measured like that )
1 1/2 teaspoon baking powder
1 1/2 tsp ground cinnamon
1/4 tsp salt
2 tablespoons (28g) unsalted butter or olive oil, melted and cooled slightly
1 tsp vanilla extract
1/4 cup (40g) raisins
In a medium bowlwhisk together the yogurt, pasta, baking powder, cinnamon, and salt. Stir in the maple syrup. Add the flour mixture, stirring just until incorporated. Allow the cookie dough rest for 10 minutes.
Using a spoon and spatula, dip the cookie dough into 15 curved scoops on the sheet, and apply to the desired thickness and width by means Vegan Chocolate Chip, Oatmeal, and Nut Cookies Recipe - Allrecipes ... of a spatula. Bake at 325°F for about 10-12 minutes. Cool to the pan for 10 minutes before turning out onto a wire rack.
Notes: It is extremely important to measure both the wheat and oats correctly utilizing this method or even a kitchen scale. (? That's the one I own and adore!) Too much of either can dry from the cookies and abandon them cakey instead of chewy.
Instant oats are also referred to as quick-cooking or minute oats. They arrive in large canisters, just like old-fashioned oats. They're not the ones at the small flavored packets of oatmeal. To create your own, add the same quantity of old-fashioned oats to your food processor, and pulse 10-12 days or until the oats will be about 1/4 into ? of their original size.
For the fermented flour, I suggest the following blend: 1/2 cup (60g) millet flour, 2 tbsp (15g) tapioca flour, two tbsp (15g) brown rice flour, as well as 1/2 tsp xanthan gum. Most store-bought fermented flour blends (such as this one!) Will also work, if measured like this.
For your best results, use the ripest and spottiest bananas you'll be able to find!
In case your pancakes are older, drier, and not so plump or succulent... Add them into a microwave-safe bowland pour water at the top till they're totally covered. Seal plastic wrap over the surface, and then microwave the bowl on high for 1 second. If you let the raisins sit while mixing together the cookie dough, this little trick hydrates them so they're really soft and juicy!
